    Crack two eggs into a bowl and add some salt and pepper.

    Whisk, whisk, whisk.

    Preheat your pan over medium-low heat and add 1 tablespoon of olive oil or butter.

    Pour the eggs into the pan and let them set for about 8-10 seconds.

    Then, slowly move them around with a spatula, as shown in the video.

    Let the eggs gently curl up - the key is to go low and slow as they cook.

    As soon as they’re about three-quarters done, turn off the heat and let the residual warmth finish cooking them.
