Warm up the tortilla by letting it crisp up over an open flame for a few seconds (use tongs for safety).

In a bowl, toss the arugula with lemon juice, extra virgin olive oil (EVOO), red pepper flakes, and Parmesan cheese. Drain any excess liquid from the mixture.

Spread the arugula mixture evenly on top of the tortilla.

In a pan, cook the eggs in olive oil with a pinch of salt, red chili flakes, and black pepper. Once the eggs are cooked, sprinkle shredded Parmesan on top.
