Paige's Pumpkin Pancakes with Homemade Cinnamon Butter
Inspired by Gilmore Girls, this recipe is a gluten-free pumpkin pancake recipe with homemade cinnamon butter.

Combine the dry and wet ingredients in separate bowls, then pour wet into dry and fold to combine.

Heat a skillet to medium and add ghee or oil/butter of choice.

Scoop into even pancakes (I like using an ice cream scooper) on the skillet and cook for a few minutes on each side, keeping a close eye.

Make sure the butter is softened (not melted) before adding all ingredients to a large bowl.

Use a hand or stand mixer to whip for several minutes till the butter is fluffy and has peaks.

Add more powdered sugar if sweeter is desired.
