    Heat a large skillet to medium. Once hot, add oil and beef. Break apart and brown.

    Once close to cooked, add diced carrots and let cook for a few minutes.

    Then add parsley and stir.

    Next, add diced tomatoes, tomato paste and broth. Stir to combine, bring to a gentle boil, then reduce to simmer, stirring periodically for about 20 minutes to let the flavors meld together.

    Add spinach in the last few minutes of cooking.

    Simultaneously cook your pasta of choice in a large pot.

    Add cooked/rinsed pasta to your sauce and top with cheese. Enjoy!
