    Heat a large frying pan with oil, add chicken, cook for a few minutes until browned, then remove and set aside.

    Add some oil back to the pan, fry tofu on medium heat until golden on each side, then remove.

    Add in garlic and vegetables, toss for 2-3 minutes.

    Add chicken and tofu back in.

    Add in sauce ingredients and toss noodles through.

  6. 6

    Push ingredients to the side to make space for the eggs, crack in eggs and scramble in the pan with the spatula, let to sit for a minute until cooked.

    Toss together until sauce evenly covers all mix.

    Serve with lime, chopped spring onion, bean sprouts, and roasted peanuts.
