Heat a large fry pan with 2 tablespoons of oil. Cook onion and garlic until fragrant.

Add curry paste and tamari, mix through, and then add coconut milk. Stir for a minute.

Add chickpeas, frozen vegetables, and spinach. Coat in sauce and let simmer on medium heat for 5 minutes or until thickened.
