Single Serve Speedy Sticky Toffee Pudding
Made in under 5 minutes and in the microwave, you can have all of the joy of a sticky toffee pudding without any of the hassle !!

Finely chop your dates and add them to the ramekin along with the hot water and baking soda. Microwave for 30 seconds.

Add 1 tbsp butter, let the butter melt and mix together. Then add the brown sugar (if you don’t want this as sweet, you could omit), flour, baking powder and oil. Mix and then microwave for around 1 minute.

In a microwaveable jug, add the sauce ingredients and microwave for 30-40 seconds, until the sugar is melted. Mix together to form a butterscotch type sauce.

Add your ice cream/ whipped cream before pouring the sauce on top. Alternatively, pour the sauce, then add the ice cream. Top with pecans, enjoy!
