    Fry your bread in butter until golden and toasted on medium-high heat.

    Add the sliced mozzarella, grated cheese, rosemary, salt and pepper.

  3. 3

    Add your apricot jam to the other slice and place on top, forming a sandwich.

  4. 4

    Add a lid and fry on for a couple of minutes, until the cheese is all melted.

  5. 5

    Flip the toastie if needed.

    Then slice and enjoy!
