Autumn Breakfast of Dreams

Soft, fluffy pumpkin pancakes with whipped cream, caramelised biscuit butter, pecans + maple syrup.

    Blend pumpkin, milk, sugar, oil and egg until smooth.

    Mix flour, baking soda, powder, cinnamon and nutmeg.

    Pour wet mixture in and whisk until all combined.

    Heat non-stick pan on medium-high heat and add a small amount of butter.

  5. 5

    Pour around 1/3 cup pancake batter into the pan.

  6. 6

    Cook on one side for approx 2 mins, then flip and cook on the other side.

    Serve with whipped cream, melted biscoff, pecans and a dash of maple syrup if desired.
