Jerk Roasted Salmon with Mango Slaw

Keeps super well for the next day, perfect for taking with you for work. The flaky salmon works so well against the crunchy slaw and it’s the most delicious flavour combination.

    Line a baking tray with baking parchment and pre heat oven to 200 degrees C

    Mix the jerk, sugar and salt together on a plate. Roll the salmon fillets in the spice to fully coat.

    Roast or airfry for 8 minutes 200 degrees C. (I like my salmon slightly pink, but if you like it cooked through cook for 10 minutes)

    While the fish is cooking make the slaw.

    Shred the cabbage using a veg peeler and finely slice the onion. Use a julienne peeler to finely shred the carrot, or simply use a grater. Slice the mango into thin strips.

    Mix the yoghurt, sriracha, mustard, lime juice and honey with the veg and a pinch of salt.

    Mash the avo with lime and a pinch of salt.

    Plate up, starting with the slaw, add the salmon on top and add a dollop of smashed avo.

    Garnish with fresh coriander and a squeeze of lime
