    Grate the onion and use your hands to squeeze out the excess moisture into the sink.

    Add everything for the patties into a large bowl with a good pinch of salt and pepper and use your hands to mix well.

    Grate the cucumber onto a plate and use your hands to squeeze out the excess moisture, then mix everything for the tzatziki together in a bowl and set aside.

    Roll the mincemeat into small patties, you want each patty to be about 65g to ensure the perfect thickness when smashed.

    Take a hot pan with a little oil add in a patty, use the pita bread to firmly push down the patty to smash it, keep adding pressure for first minute of cooking - then Cook for a further 2-3 minutes until golden Brown. flip and Cook for another couple of minutes on the other side. Continue for all patties.

    Load each pita with loads of tzatziki, crumbled feta, chopped cucumber and tomatoes, some pink pickled onions and some extra fresh dill.
