Roughly chop the prawns.

Mix everything together for the sauce, give it a little taste test - if you like it more spicy then add a little more gochugang, then add in the chopped prawns, spring onion and sesame seeds.

Slice open the brioche buns, add a couple of lettuce leaves, spoon in the prawn mixture and top with chopped chives.
