Veggie + Feta Quinoa Bake
One of my all time favorite simple side dishes to make. Love this one with some balsamic chicken, simple salmon, or Italian chicken sausage links!

Preheat oven to 400°F.

In a 9″x13″ baking dish, toss the bell pepper and the onion with the olive oil and season with salt and pepper. Spread out evenly in the baking dish, then roast in the oven for 30 minutes.

While veggies are baking, cook your quinoa according to the directions on packaging. Use the veggie broth in place of the water to cook the quinoa.

Once the peppers and onions are roasted, remove from oven and stir in the baby spinach, garlic, Italian seasonings, and white wine. Add in the cooked quinoa, season well with salt and pepper and a dash of red pepper flakes, and stir until everything is well combined.

Top with the crumbled feta and bake for another 20 minutes. Broil for 3-5 minutes at the end until feta is slightly browned (be careful not to burn!!).
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days.
