Easy and Gluten Free Chicken Fried Rice

    In a large skillet or on a griddle, cook your chicken (or protein of choice) in some avocado oil and season well with salt and pepper. Once cooked, remove and set aside.

    Add another splash of oil and your diced onion. Cook for 3-4 minutes, then stir in the mixed vegetables. Season with salt, pepper, and garlic powder. Cook for a few minutes then push to the side.

    Add another splash of oil and your whisked eggs. Scramble the. Push to the side with the vegetables.

    Add sesame oil, rice, and coconut aminos. Mix in cooked chicken, then mix with everything else and allow to cook for 3-5 minutes.
