Tortellini Soup

A quick and delicious weeknight dinner that everyone eats in our house!

    Cook and break up the sausage over medium high heat in a stockpot.

    Once almost fully browned, add carrots and onion to stockpot. Sauté for 5 minutes until vegetables start to soften.

    Add spices and tomato paste, mix and sauté for another 5 minutes until fragrant.

    Stir in the flour and mix again for a minute, this will look like a dry mixture, keep stirring to make sure it doesn’t burn.

    Add broth, stir and bring to a simmer, then reduce heat and let simmer for 15 minutes.

    Stir and add cream, tortellini and spinach, stir and let cook for another 5 minutes or however long the tortellini needs to cook.

  7. 7

    Add Parmesan cheese and mix.
