Butternut Squash and Italian Sausage Pasta

A creamy and savory pasta dish perfect for fall and winter.

    Add chopped up butternut squash to a sheet pan and drizzle with olive oil. Bake in oven at 400F for about 20 minutes or until soft.

    Bring water to boil and boil pasta. Once almost done, save 1/2 cup of the water.

    In a pan, add onion and Italian sausage. Season with salt, pepper and Italian seasoning and sauté until sausage is fully done.

    Add butternut squash sauce to pan and mix before also adding spinach. Season with red pepper flakes. Combine.

    Add pasta, the water you reserved, a sprinkle of cheese and the sour cream.
