Chicken Rice Bowl with Yellow Rice and White Sauce

A flavorful and savory chicken rice bowl with juicy chicken, yellow rice, and a tangy white sauce.

Directions

    Cut chicken thighs into cubes.

    Combine all spices, oil and lemon juice into a marinade and marinate chicken for at least 1 hour in the fridge (or more if you have time).

    Cook on medium high for 10 minutes or until chicken is cooked through.

    Dice yellow onion and sauté in a pan in some olive oil.

    Add spices and stir for a minute.

    Add rice and stir for another minute.

    Add stock and bay leaves, stir and cover with lid.

    Simmer for 20 minutes or until rice is fully cooked and water has been absorbed.

    Combine all white sauce ingredients in a bowl and mix.
