Crispy Bacon Hasselback Potatoes
A delicious side dish or well-rounded meal featuring crispy bacon and hasselback potatoes.

Wash and place potatoes on a cutting board. Use chopsticks or straws and place around the potato. Slice the potato but stop as your knife hits the chopstick or straw to ensure that the potato stays intact at the bottom.

Coat potatoes with olive oil, salt, pepper and garlic powder, and place on a baking sheet and bake in oven at 425F for 30-45 minutes depending on size. Once soft they are done.

Meanwhile place bacon on another baking sheet and bake for 10-15 minutes. Once done, chop up and add to potatoes, top with chives and sour cream.
