Autumn Buttered Noodles

Buttered noodles with a twist - browning the butter and adding crispy sage

    Bring a pot of heavily salted water to a boil and cook the pasta according to the packing instructions.

    Slowly brown the butter by melting it on medium heat in a deep sauce pan. Add the sage and kale halfway through.

    When the pasta is halfway cooked, scoop out 1/4 of the salted cooking water and add it to the butter - mix until it's combined and gets thicker/turns glossy.

    Add the pasta to the sauce, and add in the parmesan cheese and extra 1/4 cup of that pasta cooking water. Mix quickly yet gently, until it's all combined and the cheese has melted evenly into the pasta and sauce.

    Top with more parmesan-reggiano and fresh cracked black pepper before serving.
