Pear, Dark Chocolate & Almond Sponge Pudding
I had a moment of self doubt when I pulled this out of the oven… but then I plated it up, poured on the custard and took a mouthful and swore profusely about its delicious favours and unctuousness and then I realised…. Puddings are my super power

Preheat fan oven to 170 degrees C.

Put the butter and sugar in a moving bowl and beat for at least a few mins until light and fluffy. Add the vanilla and almond extract and an egg and beat in and then beat in the second egg.

Add the flour, ground almonds and baking powder and fold in. Then gently fold in the pears and chocolate.

Grease a deep rectangular baking tray approximately 30cm by 20cm. And sprinkle the sliced almonds over the top. Bake for 30mins, turn and bake for 5 more mins. Run a knife around the edges so that they don’t stick and slice into 8 pieces. Serve.
