Broccoli, Bacon & Butterbean Soup

A wholesome, delicious, easy soup for a family dinner

    Heat a large heavy bottomed pot on medium heat on the hob. Add the olive oil and stir in the bacon lardons and sauté for 5 mins.

    Stir in the onions and sauté for another 6-7 mins, then add the garlic and sauté for a couple more mins.

    Stir in the butterbeans and stock and bring up to a simmer for 5 mins, then add the broccoli. Cover and turn up the heat a couple of notches to bring it up to a simmer, then you can turn it back to medium heat and simmer for 10 mins.

    While that’s simmering, add the bacon lardons to dress the soup to a small dry frying pan and fry on a medium heat. They’ll fry in their own fat.

    Remove from the heat for few mins, then blitz with a hand blender until smooth. Serve up the soup and top each with a spoon of bacon lardons and grated cheese.
