Take the steak out of the fridge for 20-30 minutes before cooking.

Cut and wash the potatoes, pat dry them. For the seasoning combine everything listed, then add the potatoes. Airfry for 15 minutes at 160 then 10 minutes at 200 degrees Celsius.

For the Parmesan and miso sauce combine everything into a bowl and set aside.

Season the steak with salt and pepper on both sides. Make sure to add oil when the pan is hot, add your steak, fry for 2 minutes on each side. Then put the aromatics, butter and base the steak. Take it out and let it rest for 10-12 minutes.

Now let's cook the sauce: add the paste made to the same pan with some water. Mix and let it reduce on low heat for 2-3 minutes. When done off the gas, add the yolk and mix.
