In a pot over medium heat, melt together the first 6 ingredients. Constantly whisk as it comes together and increase heat a bit so it starts to bubble up, too. Keep stirring as it does so.

Once it thickens a bit, remove from heat and add in the oats and shredded coconut, stirring until fully incorporated.

Transfer to a bowl to let the mixture cool down enough until you can grab with your hands.

Then form into balls & press down with the bottom of a glass into cookie shape (placed on parchment paper & a flat surface that can go into the fridge, like a small cutting board).

Refrigerate for ~30 minutes.

Then transfer to an air tight container for storage in the fridge.
