    Crack the 3 eggs into a bowl and whisk them until the whites and yolks are fully combined. Add a pinch of salt to taste.

    Heat a non-stick pan over low heat. Add the butter and let it melt, making sure it coats the entire surface of the pan.

    Pour the whisked eggs into the pan. Use a spatula to stir continuously, moving the eggs around the pan.

    Continue to stir the eggs gently until they start to set but are still slightly runny. This stage should resemble very soft scrambled eggs.

    As the eggs begin to set more, stop stirring and let the omelette cook undisturbed for a few seconds to form a smooth surface. Tilt the pan and gently roll the omelette from one side to the other in one smooth motion.

    Slide the omelette onto a plate. Sprinkle chopped chives on top for garnish.
