    Crack eggs into a bowl, add salt, and whisk.

    Preheat a greased non-stick pan over medium heat.

    Pour eggs into the pan. Cook until slightly set.

    Place bread on the omelette and immediately flip the bread.

    Flip the omelette and add toppings: Spread pesto, add arugula and tomatoes.

    Fold the omelette, cook 1 more minute, and serve.
