Tarts are soooo nostalgic to me and this version is perfect for Autumn

    Preheat oven to 350ºF.

    Combine 1 1/2 cup oat flour, 1/4 cup coconut sugar, 1/2 tsp salt, and 1/3 cup coconut oil (softened not melted).

    Add in 1/4 cup ice cold water and knead until dough is formed

    If too crumbly, add 1 tbsp water at a time.

    Roll out dough.

    Cut into desired shapes.

    Make filling by combining 1/4 cup pumpkin puree, 1 tsp pumpkin spice, and 2 tbsp maple syrup.

    Spread onto half of the bottoms.

    Top with remaining halves.

    Bake for 15 minutes.

    Prepare topping by heating 1 tbsp non-dairy milk for 30 seconds in microwave then adding 1/4 cup chocolate chips. Stir until melted.

    Top cooled tarts with chocolate and extra cinnamon.
