Oatmeal Pumpkin Cookies (dairy-free and gluten-free)

    Preheat oven to 350ºF.

    Combine 1/2 cup pumpkin puree, 1 egg, 1/4 cup avocado oil, a dash of vanilla extract, and 1/3 cup coconut sugar.

    Add 1 tsp baking powder, 2 tsp pumpkin spice, 1 cup oat flour, and 1 cup oats.

    Fold in 1/2 cup chocolate chips.

    Scoop onto a parchment lined baking sheet.

    Bake for 14-16 minutes.
