If you couldn’t tell by all the comfort food on my page recently, I’m feeling under the weather and this noodle soup is doing bitsss to help with that!

    Add butter, onion and carrot to a pan over medium heat and sauté for a couple of minutes until softened

    Once softened, stir through garlic and ginger and fry for a few more minutes

  3. 3

    Add the miso and fry for a further minute or so

  4. 4

    Pour in stock alongside curry cubes and stir until dissolved

  5. 5

    Gently boil for a few minutes to thicken then pour over you udon, make sure to coat your noodles in the curry so each bite is delicious!

    Serve up with your toppings and enjoy
