Noodle Soup Loving

This creamy, buttery, corny noodle soup might be my new favourite!

    Add the butter to a hot pan and allow to lightly brown, next add your drained corn, spring onion white, onion and garlic, toast for a couple of minutes until golden and fragrant

    Remove corn from pan and blend 3/4 of the corn mix until smooth alongside the miso and plant milk, meanwhile bring stock to the boil and cook noodles

    Add puréed corn to your bowl along with soy sauce, sesame oil and stock, mix until combined

    Load up your soup with noodles, remaining corn, spring onion greens, shiitake mushrooms, wakame, chilli oil, sesame seeds and whatever your heart desires
