French Onion Croquetas
Two of my favourite cuisines merged together to make these mouth-wateringly good croquetas.

Add in the butter and onions to a hot pan over a medium heat. Cook until softened and golden, stirring occasionally.

Dump in your flour and stir until evenly incorporated, cook for a few minutes until it smells nutty and fragrant.

Pour in the milk while continuously stirring. Once incorporated and thickened, mix through seasonings and cheese.

Once the cheese has melted, pour mixture into a cold dish/tray.

Once cooled to room temperature, place in fridge for at least 4 hours or overnight, alternatively place in freezer for about an hour.

Once cooled, remove from fridge/freezer and roll heaped tbsp into desired shape.

Coat in flour, followed by egg mixture, and finally breadcrumbs.

Deep fry in hot oil for about 2-3 minutes until golden brown and hot through out.

Serve with more cheese and some chives.
