Matcha Shortbread
Smiski ice cream sandwiches combining my two favorite things, figurines and food.

Sift and mix together matcha, flour, and cornstarch in a medium bowl.

Using the paddle attachment of your stand-mixer, cream together butter, sugar, and powdered sugar on low. It should be lightened in color and fluffy. Crack in one egg and mix.

Add in the dry ingredients and mix on low until the dough just comes together. Wrap the dough in plastic wrap and flatten into a disc. Refrigerate for 5 hours.

Flour surface and roll out the dough. Cut out shapes and chill. Bake at 175C for 15min.
