Mexican Style Sweet Potato Bowl

If you like the concept of poké bowls, this dinner bowl might be for you too! It’s assembled from a carb base, followed by a protein and then different nutritious toppings – just like your poké would – but with a Mexican rather than Asian twist.

    Peel the sweet potato and cut into cubes. Toss together with some salt and pepper, paprika powder and dried garlic. Spray your air fryer basket with cooking spray, add in the sweet potato and fry for 10 min. on 200°C.

    Fry the minced chicken with some dried garlic, chilli flakes and spaghetti herbs.

    Cut the tomato into small cubes. Chop up the coriander. Stir both together with the lemon juice and some salt.

    Mash the avocado.

    Assemble your bowl: sweet potato, minced chicken, tomato salsa, avocado, skyr and coriander.
