    Whisk together all ingredients until smooth. Put aside for half an hour or so to thicken.

    Pre-heat the waffle iron, and spray with coconut oil or neutral olive oil if needed.

    Pour 1/3 cup batter on to the centre of the waffle iron, and cook until golden and lightly crisp.

  4. 4

    Repeat with the remaining batter.

    Serve the waffles warm with your choice of toppings.


Notes

This mix can also be made the night before. Simply warm up your pan, and you’re good to go as soon as you’re in the kitchen. It also lasts for about 2-3 days in the fridge.
