Soft & Chewy Toffee Caramel Cookies
Packed with toffee, caramel, and white chocolate chips, these cookies are easy to make and delicious.

Preheat the oven to 375 degrees.

Using a stand mixer, combine the butter, brown sugar and granulated sugar until well mixed.

Scrape the sides of the bowl and add in the eggs, caramel and vanilla. Mix until well combined.

Add in the flour, salt and baking soda and mix until the dough forms.

Fold in the white chocolate chips and toffee bits.

Portion out the dough into 3 tbsp portions and arrange on a baking sheet lined with parchment paper.

Bake at 375 for about 9 minutes. The cookies will start to brown on the edges.

Allow to cool completely and then move to a wire rack.
