Prep your veggies by dicing the onion, thinly slicing your carrots (if using baby carrots) and roughly chopping the broccoli

Heat a drizzle of oil in a large pot over medium high heat and add the onion and garlic. Sauté for about 3 mins

Add flour and stir about 2 mins. Pour in the chicken broth, broccoli, carrots, and seasonings.

Bring to a boil then turn the heat to medium low and simmer for about 15 mins.

Meanwhile grate the cheese block until it’s all shredded.

Then add in the heavy cream and cheese and simmer for another 10 mins. Serve!
