French Onion Chicken
One of the best chicken dishes you could ever make, with perfectly caramelized onions and melted Gruyère cheese.

Preheat the oven to 400 degrees. Pat the chicken dry and slice the 2 chicken breasts in half to make 4 thin pieces of chicken. Season with salt and pepper on both sides.

Add a drizzle of olive oil in an oven safe skillet over medium high heat. Cook the chicken on each side for about 3 minutes until they slightly browned. (the chicken will finish cooking later). Remove the chicken and set aside.

Turn the heat down and add 2 tbsp of butter to skillet . Add the onions and cook for about 5 mins until softened.

Pour in the balsamic vinegar, and continue to cook for 10 minutes. Add in the garlic and cook another 5-10 minutes stirring frequently until caramelized.

Mix the cornstarch into the chicken broth and pour over the onions. Simmer until the onions are thick jam like consistency.

Remove the pan from the heat and add the chicken back in with onions. Nestle the chicken with onions on top and sprinkle the cheese over each piece of chicken.

Bake in the oven for about 6 minutes and then broil for about 2 minutes.
