Asian Beef Tacos with Cilantro Lime Rice

    To a small pot, add a drizzle of olive oil and the minced garlic. Then add in the rice and stir until lightly toasted. Add in the water and bring to a broil. Then turn the heat to low and cover with a lid and cook for about 15 minutes.

    To another pan, add a drizzle of olive oil and cook the ground beef until browned. Season with some salt, pepper, garlic powder and onion powder.

    Once the ground beef is cooked add in the soy sauce and sweet thai chili sauce.

    Fill the tortillas with the beef and top with chopped cucumber, cilantro, and chopped peanuts.

    Wipe out the pan that had the ground beef and add another drizzle of olive oil. Place the tacos in the pan working in batches to light brown them.

    To the rice, add in cilantro, lime juice and lime zest.
