Preheat the oven to 350 degrees and grease a 9x5 loaf pan with cooking spray. In a large bowl, combine the pumpkin, egg, brown sugar, oil, sour cream and vanilla extract.

Then add in the pumpkin pie spice, flour, baking powder, baking soda and salt.

Prepare the cream cheese filling by mixing together the egg, cream cheese, sugar and flour.

Pour 2/3 of the batter into the pan and then pour the cream cheese mixture over the batter. Then pour the rest of the batter on top of that. Do not mix!!!!

Bake for 50 minutes and then let it cool completely before slicing.
