Mocha Marble Cake

I turned 21 today so obvs had to whip up my own bday cake

Directions

    Line 2x 7” cake tins and preheat oven to 180c

    Make the buttermilk by combining milk and lemon juice and setting aside to curdle

  3. 3

    Whisk in the butter, nut butter, sugars, vanilla

  4. 4

    Sieve in the dry: flour baking powder baking soda and whisk until just combined

  5. 5

    Divide the batter into two bowls and fold in the cocoa powder and coffee to one

  6. 6

    Add alternating dollops of each batter into the tins, and swirl with a knife to create the marble effect

  7. 7

    Bake for 26-27mins and then let cool

  8. 8

    Whip the cream to stiff peaks before folding in the icing sugar and vanilla extract

  9. 9

    Make the coffee syrup soak by combining all ingredients and setting aside

  10. 10

    Assemble: soak the sponges in the syrup and sandwich and top with the cream. Dust generously with cocoa powder and ENJOY
