Blueberry Crumble French Toast

Thick slices of vegan challah made into fluffy French toast, topped with homemade blueberry compote and airfryer crumble.

    Make the crumble: add ingredients to a small bowl. Rub with fingertips to resemble breadcrumbs. Airfry at 175°C for 7 minutes, or until crisp and golden.

    Heat up a pan with a bit of vegan butter.

    Combine beaten egg, milk, and protein in a shallow bowl/plate.

    Dunk the bread slices to absorb all egg mixture.

    Fry the French toast both sides until golden.

    Meanwhile, microwave or stew your berries with maple until broken down.

    Assemble: top the French toast with the blueberry compote, a generous sprinkle of crumble, and custard or maple to serve.
