Apple Crumble Muffins
bakery-style cinnamon muffins, with sweet maple apple pieces and a crisp crumble topping!

Preheat oven to 200°C and line a jumbo muffin tin.

Peel and chop the apple into 1cm cubes, toss in cinnamon and syrup, then set aside.

Make the crumble in a small bowl: mix the flour and sugars, then rub in the cold butter with fingertips until it resembles a wet sand. Set aside.

To a large bowl, add the milk and lemon juice, leave a few minutes to curdle.

Add in the yogurt, sugars, egg or replacer, and vanilla.

Sieve in the dry: flour, baking powder, baking soda, cinnamon, and fold this in until just combined.

Fold the apples.

Add the batter to your tin, topping with the crumble.

Bake for 10 minutes at 200°C, then reduce the temperature to 180°C and bake for a further 15-16 minutes until golden.

Top with icing sugar glaze and enjoy warm!
