Passion Fruit Habanero Sauce

Directions

    Whisk together the champagne vinegar, sugar, salt, and black pepper. Add the finely diced red onion and mix well. Cover and place in the fridge to chill for at least 30 minutes.

    Combine the passion fruit juice, habaneros, and white soy sauce. Blend until smooth. Transfer the sauce to a container and place in the fridge to chill.

    Shuck the oysters and arrange them on a bed of crushed ice. Spoon the passion fruit habanero sauce over each oyster. Top with pickled onions and garnish with sliced serranos.
