    If you’re working with live shrimp, place them in ice water for 15 minutes or until they stop moving. Once they’re asleep, split the head and tail with a knife from the underside. Finish cutting the shell with scissors. Clean the heads by removing any brown gunk, as it can be bitter.

    Heat a large skillet over medium-high heat. Add the olive oil and reduce the heat to low. Add the shrimp and cook until they are 75% cooked.

    Add the smoked paprika and minced garlic. Stir gently, then finish with a squeeze of lemon juice and a good pinch of kosher salt.

    To serve, place the shrimp on a plate and pour the sauce over them. Serve with lemon wedges and a warm baguette.
