Slow Aging Zucchini Blossoms in Tomato Sauce
Proof that water-based cooking doesn't have to be bland, with a delicious and healthy recipe for slow aging zucchini blossoms in homemade tomato sauce.

Mix ricotta or tofu with garlic and egg, salt and pepper.

Fill zucchini blossoms.

Make the sauce: In a saucepan, set 2 cloves of garlic in heated olive oil until it just starts to brown and then remove. Add the tomato sauce and simmer for 30 min or until the tomato begins to break down. Add salt and pepper to taste.

Set stuffed blossoms into the sauce and simmer for 10 min.

Serve with hand torn basil and parm or plant parm if using.
