Green Curry with Salmon

Heat coconut milk in a pot and add the green curry paste. Stir.

Add bok choy and basil and bring to a simmer.

Place salmon in the curry and smush it slightly so the curry covers the salmon somewhat. Add fish sauce. Cover and simmer for 5 minutes or when the salmon feels slightly firm to the touch.

Adjust seasoning if needed and add more basil on top. Add thinly sliced Thai peppers if using.
