Chilli Bean Soup

Heat some oil in a pan over medium heat.

Add onions, garlic and spices. Mix well and cook for 3 minutes until onions have softened.

Then add the pepper, beans, tomato purée and peanut butter. Mix well for a few minutes.

Then add your stock. Bring to boil, then let it simmer for 10 minutes, whilst you take out about 4-5 ladlefuls of the soup and blend. Return the blended mixture back to soup and taste for seasoning.
