This streamlined Moroccan Fish Tagine is an impressive, yet weekday-friendly dinner.

    Preheat oven to 400ºF.

    Combine potatoes, carrots, bell pepper, onion, and olives in a tagine or 4-quart baking dish (or large oven-safe skillet).

    Add half a bottle of Mina Moroccan Simmer Sauce and toss to coat.

    Cover and roast for 40 minutes, until the vegetables are fork-tender.

    Arrange fish fillets overtop and lightly season with kosher salt.

    Pour remaining half bottle of sauce over fish and vegetables.

    Scatter lemon slices overtop and bake, uncovered, until the fish is flaky, about 15 minutes.

    Serve with couscous, rice, or crusty bread.
