Preheat the oven to 180°C / 390°F. In a large bowl, whisk together the tamari, miso, maple syrup and sesame oil. Add the rice followed by the tofu and toss together; pour onto a large baking tray and spread out into a single layer. Place the tray in the oven and cook for 25-30 minutes until crisp and golden.

For the toppings, place the kale in a medium bowl, squeeze over half the lime juice, add a pinch of salt and toss together, using your hands to soften the leaves; set aside. Prepare the remaining topping ingredients.

To serve, remove the tray from the oven and use a wooden spoon or a spatula to gently break up the rice, it should hold together in crispy chunks. Divide between bowls and garnish with the topping ingredients. Squeeze over the remaining lime juice and enjoy straightaway.
