    Cook the pasta in salted water in a large saucepan according to the instructions on the pack. Place the tofu in a steaming basket on top of the pan and steam it as the pasta cooks (optional).

    Once al dente, drain the pasta and rinse with cold water, until the pasta is cool to touch. Leave the tofu to one side to cool.

    Mix the dressing ingredients together in a small bowl and season with salt and pepper to taste.

    Toss the cool pasta and tofu with the cucumber, sun-dried tomatoes, cherry tomatoes, red onion, most of the chopped basil, the olives, and the dressing. Serve with some basil leaves on top.
