Place the prawns into a bowl along with the cornflower, five spice and salt, then dredge through until fully coated. Tap off any excess then fry the prawns in oil heated to 180c for about 2 minutes. Remove the oil and drain on some kitchen paper.

In a separate wok or pan, stir fry the onion and the white part of the spring onion for a couple of minutes, then add the crispy prawns, spices, chilli and green spring onion. Toss well then serve with a portion of fried rice.
